  • Learn about coffee from different growing area and which varieties are highly regarded, discover which region produce coffee that matches your tastes. Most coffee is grown in Latin America, Africa and Indonesia.
  • Determine of your roast coffee preference, French roast, Italian roast that shows a darky roasted coffee, although the actual beans aren't specified.
  • Many special coffee shop offer their own custom blends, but there is a standard as well: Mocha-Java for example is a famous blend of coffee from Yemen (Mocha) and Java.
  • Store coffee bean and ground coffee in an aircraft conainer in a cool, dry place, if we don't use coffee bean within a week, or ground coffee with a few days. Keep the coffee in the freezer.

I am live in Indonesia, that very close to coffee product. Yes I am drink a coffee, every day, yes every day. Do you think that this habit can make my health is not good? I don't know, but untill now I don't have any seriouse problem to my health.

Indonesian coffee product are dominated by certain trade mark on every certain type of coffee. Black coffee is dominated by "Kapal Api" coffee, but milk coffee is dominated by "ABC" coffee, while instant coffee is always dominated by "Nescafee". This image is being spread on every place especially in Java of Indonesia.

If you go to other places, this domination also change, in Bali people will consume of Bali coffee and many other coffee that come from outside of this island, like toraja coffee, medan coffee and of course Luwak Coffee that be the most expensive coffee in the world.

Instant Coffee

So many people in this world consume Coffee, as their favorite beverages. It is definitely my liquid of choice, with all the invigorating caffeine, great taste, and wonderful-smelling volatile flavor, which gives coffee a sweet, fruity aroma. Organic, fair-trade whole-bean coffee is my preference, but those with less patience may desire long-lasting, easy-to-prepare "instant" soluble formulations.

Much modification to this product in order can save in long time, and still have good taste and flavor. Until the eastern country the Japanese begin their research to this product. The Japanese were the first to produce a stable instant coffee product in the early 1900s. During World War II, instant coffee gained fame among American soldiers after Nestlé marketed its Nescafé brand.

The instant beverage was updated in 1963, when Kraft introduced its Maxwell House freeze-dried instant coffee, which the company claimed tastes more similar to fresh-brewed coffee than other instant coffee products. Within a few years, all major manufacturers had freeze-dried coffee products on the market.

Taste and smell aside, most people drink coffee in all of its incarnations for that energizing alkaloid compound—caffeine. According to the National Nutrient Database for Standard Reference, instant coffee has about two-thirds the caffeine content of fresh-brewed coffee. More precisely, 8 oz of freshly brewed coffee contains 95 mg of caffeine, whereas the same amount of instant coffee has only 62 mg of caffeine.

But the caffeine content of coffee depends on many factors, including coffee bean species, bean ripeness, and the roasting and brewing processes. Thus, citations of caffeine content in different coffee beverages are reported with exceedingly wide ranges, and the database figures are more a rule of thumb than law.

All instant coffee production involves roasting coffee beans and then brewing them in hot water. Before the brew can be further processed into instant coffee, oxygen and insoluble particles such as coffee grounds must be removed. After this, the brew is dried by one of two methods to yield instant coffee.

One common way to desiccate the brew is through spray-drying: The coffee is sprayed through a nozzle to produce tiny 300-µm-sized droplets that fall through drying towers until they reach the base as a parched powder. The drying towers are kept at high pressures and temperatures near 270 ºC. The fine coffee powder may be rewetted to produce larger granules that are dried and finally packaged.

In the freeze-drying process, the brewed coffee is first frozen and then crushed to obtain the desired granule size. Standard & Alternative Products (SAAP), which produces instant coffee products, aims for granules of about 3 mm in diameter, for example. Granules that are too large or small are melted and refrozen. Frozen granules of the proper size are placed in low-pressure drying chambers at –50 ºC, and the water is removed by sublimation as the drying chamber warms.

Both processes run the risk of losing compounds that contribute to the desirability of the drink. For instance, caffeine sublimates at 180 °C at atmospheric pressure, so the high temperatures in spray-drying chambers may affect instant coffee's caffeine content and the content of organic compounds that provide taste and aroma. Whichever process is used, the final product is often packaged under carbon dioxide or nitrogen because the presence of oxygen will cause further loss of aroma and flavor.

Robusta and Arabica

If you be a coffee devotee, may need to know the different between many coffee available in the market. Even many people know that coffee contains of caffeine, but many people also favor of coffee. There are two famous coffee in a market, Robusta coffee and Arabica Coffee. Arabica Coffee may be the most commonly consumed coffee plant but Coffee Robusta accounts for approximately 25% to 40% of the coffee grown in the world. Discovered in 1898 in Congo, Robusta Coffee is the most commonly grown variety of the Coffea canephora species of coffee plant. It is popular among growers because it can grow in less rigid conditions than Arabica Coffee.

The Robusta Coffee plant is a robust shrub that can grow up to heights of 10 to 12 feet. Unlike Coffea Arabica coffee plants, the Robusta coffee plant does not need to grow at high altitudes. As a result, it is grown in areas that are between sea level and 800 meter elevation ranges. Additionally, Robusta coffee plants require less care to grow due to the fact that it is hardier. This means that it is the cheaper of the two main types of coffee plants to grow. Robusta Coffea has a shallow root system and the fruits that grow from the plant take up to 11 months to mature. The cherries that grow on the robusta coffee plant require less care, as they remain on the trees after it ripens. Additionally, coffea robusta has an advantage over coffea arabica for coffee growers, as this coffee plant species tends to be less susceptible to problems related to pests and rough handling. As a result, robusta coffee plans tend to yield more pounds of finished coffee beans per acre at a lower cost of production than arabica coffee plants. Arabica, Robusta and Jamaica Coffee

The coffee tree is indigenous to Ethiopia, not Arabia as many tend to think and belongs to the genus Coffea of the Rubianceae, or madder, family.

The first English coffee house opened in Oxford in 1650 and by 1675 there were nearly 3000 coffee houses in England.

Johann Sebastian Bach is thought to have been a devoted coffee lover and wrote a secular work "The coffee cantata - Kaffe Kantate" in 1732 that includes an aria "Mm! How sweet coffee tastes! More delicious than a thousand kisses, sweeter by far than muscatel wine! I must have my coffee."

Seedlings produced by the Amsterdam Botanical Gardens, later classified as Coffea arabica var arabica account for most of the billions of trees now growing in South and Central America and the Caribbean.

The next most important strain of arabica (var bourbon) came from French plantations on the Indian Ocean island Reunion, originally called Bourbon.

The other commercially important species, Coffea canephora (usually referred to as robusta) is also a native of Africa and now accounts for 20% of world exports.

There are a number of varieties of both arabica and robusta. In Jamaica, only arabica is grown and according to the 1953/1983 Regulations "blue mountain coffee means: coffee seed that is grown in the Blue Mountain Area as described in the Schedule; and processed or manufactured at any coffee works specified in the Schedule and to which a license granted pursuant to regulation 5 relates."

The quality of the beans is graded into Blue Mountain No. 1 - 3, Pea Berry and Triage. Other grades of Jamaican coffee include: High Mountain Supreme, Jamaica Prime and Jamaica Select. In its wild state, the shrub grows to about 8 to 10 meters.

Although Jamaica does not have much of the world market in terms of production (International Coffee Organisation), the beans are well known for their exceptional quality and Blue Mountain coffee commands extremely high prices. Blue Mountain Peak stands approximately 2256 m (7402 feet) high, the average rainfall for Jamaica is about 198 cm (78 inches) and the average temperature is 27 C (82 F). Together with sunshine every day and good soil, it all contributes to not only great coffee but the land of "wood and water" presents an incredibly beautiful environment to live and work in.

Coffee Choice

The following would hardly make it through an academic review process, but here are some observations based on our 2008 sampling of reader nominated coffees (this speculation has a margin of error of somewhere around 100%).
  1. Current specialty coffee drinkers may be losing interest in extreme dark roasts, and fewer small regional roasting companies are roasting all of their coffees dark regardless of origin.
  2. On the other hand, few of the smaller roasters we sampled have migrated to the newly trendy medium-to-light roasts. Most are situating themselves right in the middle of the roast spectrum — in artisan-roasting terms, just into the second crack.
  3. Small roasting companies and their customers continue to interest themselves in coffees certified Fair Trade and organic.
  4. It appears that few of the nominated roasting companies have jumped onto the micro-lot bandwagon. (Micro-lots are very tiny lots of extremely refined coffees, usually sourced directly from small growers.) Most nominated coffees appear to be from old-fashioned macro-lots sourced through the regular specialty supply chain, identified rather broadly by origin, coffee type, certification or occasionally farm. Names were familiar, ranging from Tanzanian Peaberry (a favorite, with several nominations) through well-established Central American estate names to plain old Colombia.
  5. Small roasting companies continue to sport names that lean toward the rustic and irreverent: Rusty Car Roasters, Muddy Dog Roasters, Wildfire Roasters, and not reviewed here, Black Bear Microroastery (with its Hibernation Blend) and Pike's Perk (in Colorado of course).
  6. The great majority of nominations came from the middle part of the country, between the coasts. It may be that readers and roasters in those parts of the country feel left out, though I hope not. The reader who nominated the excellent Yirgacheffe from San Antonio-based Wildfire Coffee Roasters (90) wrote that he "would like to see a roaster from a non-traditional (for most roasters) part of the U.S. get a mention."
  7. The quality of this sampling overall was arguably better than past Readers' Choice samplings. There seemed to be fewer outright defective green coffees and more tactful, origin-sensitive roasting.
  8. On the other hand, a surprising number of mildly musty coffees turned up, though most were the kind displaying the pleasant, roundly rich kind of mustiness that can be safely glamorized as earthy.

The United States consumes one-fifth of all the world's coffee, making it the largest consumer in the world. But few Americans realize that agriculture workers in the coffee industry often toil in what can be described as "sweatshops in the fields." Many small coffee farmers receive prices for their coffee that are less than the costs of production, forcing them into a cycle of poverty and debt.

Fair Trade is a viable solution to this crisis, assuring consumers that the coffee we drink was purchased under fair conditions. To become Fair Trade certified, an importer must meet stringent international criteria; paying a minimum price per pound of $1.26, providing much needed credit to farmers, and providing technical assistance such as help transitioning to organic farming. Fair Trade for coffee farmers means community development, health, education, and environmental.

Coffee prices have plummeted and are currently around $.60-$.70 per pound. "With world market prices as low as they are right now, we see that a lot of farmers cannot maintain their families and their land anymore. We need Fair Trade now more than ever," says Jerónimo Bollen, Director of Manos Campesinas, a Fair Trade coffee cooperative in Guatemala. Meanwhile coffee companies have not lowered consumer prices but are pocketing the difference. "The drastic fall in coffee prices means, in two words, poverty and hunger for thousands of small producers in Latin America," says Merling Preza Ramos, Director of PRODECOOP Fair Trade cooperative in Nicaragua
